Orange Chocolate cheesecake



300g digestives

150g butter

Cheesecake Filling

500g Appleby Creamery soft cheese

300g orange chocolate

75g icing sugar

300 ml double cream

Optional chocolate orange segments to decorate

Optional orange zest to decorate


Melt the butter in a small pan over a medium heat until melted. Place the biscuits in a strong food bag and bash with the end of a rolling pin. Add in the butter and combine together. Press down the mixture into a spring form tin with a spoon, chill for an hour approx.


Melt the 300g of chocolate in a bowl over a pan of simmering water, stirring gently, leave to cool. Combine the Appleby Creamery cream cheese and Icing sugar until thick, set aside. Whisk the double cream then fold the mixtures together. Then fold in the melted chocolate. The mixture should be thick, if not whisk again. Pour the mixture onto the biscuit base, decorate if required and chill for 6 hours+.
